It's a shellfish allergy, Charlie Brown!
So
the other half is away again, which of course means some type of
shellfish for dinner. Tonight my friend Erin came over for a lady's
supper, so I made cornmeal-crusted shrimp over risotto. This is based
on a Bon Appetit recipe
for shrimp with butternut squash risotto. I didn't have any squash, but
I had made pumpkin bread the day before, so I used the rest of the
canned pumpkin for the shrimp. Charlie Brown would have been very proud:
The deets:
raw shrimp(4-6 per person; cleaned or bought cleaned if you're squemish)
cornmeal
butter
white wine
risotto rice ( you can't really substitute other rice here;if you don't have it, skip this dish)
canned pumpkin
onions.
Detailed directions are in the link from Bon Appetit, but basically:
1. Dredge the shrimp in cornmeal
2. Fry in butter till pink.
3. In the meantime, make the risotto (see link).
Wait all night in a pumpkin field only to fall asleep. Oh, Charlie Brown!
